Houblon de la Motte has been growing, harvesting and drying French organic Cascade hops and processing them into pellets in Flanders (59) since 2017.
This variety is one of those selected for its vigour, aroma qualities and disease resistance.
The grower has been growing hops organically since 2017 and obtained certification in 2021.
About twenty additional hectares have been planted since 2019; their harvests are available on www.brewstock.fr, both organic and in conversion to organic.
A flagship variety for pale ales and IPAs, bred in the USA and released in 1974, Cascade is a revolutionary variety in many respects:
- Excellent yields (up to 2500 kg per hectare)
- Very good disease resistance, particularly to downy mildew
- Very distinctive and fairly persistent citrus and resinous aroma properties.
Initially little known, it developed in the USA from the 2000s, reaching 20% of the cultivated area in 2013. It arrived in Europe in the early 2010s, in England, France, then Germany and Poland.
Planning to brew an American Pale Ale, an IPA, a pale ale? French organic Cascade is the ideal variety!
Its genetics are surprising: it comes from a Russian variety, Serebrianka, an English variety, Fuggle, and a wild American variety.
It has caused an upheaval in the hop world since its release, and many varieties are descended from it:
You can substitute Cascade with these varieties, or with:
- Chinook,
- Columbus.
- Centennial (also known as the “Super Cascade”)
