The Polish grower has been producing organic Cascade since the 2010s in eastern Poland, a historic hop-growing region.
The Cascade hop from Poland is a cousin of the original American Cascade hop, with more floral aromas and notes of citrus.
A flagship variety for pale ales and IPAs, bred in the USA and released in 1974, Cascade is a revolutionary variety in many respects:
- Excellent yields (up to 2500 kg per hectare)
- Very good disease resistance, particularly to downy mildew
- Very distinctive and fairly persistent citrus and resinous aroma properties.
Initially little known, it developed in the USA from the 2000s, reaching 20% of the cultivated area in 2013. It arrived in Europe in the early 2010s, in England, France, then Germany and Poland.
Planning to brew an American Pale Ale, an IPA, a pale ale? Organic Cascade is the ideal variety!
Its genetics are surprising: it comes from a Russian variety, Serebrianka, an English variety, Fuggle, and a wild American variety.
It has caused an upheaval in the hop world since its release, and many varieties are descended from it:
- Santiam
- Pilgrim
- Mandarina Bavaria
- Cashmere
- Mistral
- Hallertau Blanc
You can substitute Cascade with these varieties, or with:
- Centennial (also known as the “Super Cascade”)
- Chinook,
- Columbus.
