Description

Matthieu Mairet, heir to a long line of hop growers in Burgundy, produces the legendary variety “Tardif de Bourgogne” in very small quantities.

The Tardif de Bourgogne variety is considered one of the last old hop varieties still produced in France today, along with Tige Verte des Flandres and Strisselspalt (although doubts remain about the origin of the latter).
Brewers consider Tardif de Bourgogne to be a fine aroma variety, quite close to German varieties such as Hallertau Mittelfrüh or Spalter.
