Description

Riquier Thevenin (Houblon de la Clairvoie) has been growing the Cascade hop variety since 2017 in Meteren (59) in French Flanders.

A flagship variety for pale ales and IPAs, bred in the USA and released in 1974, Cascade is a revolutionary variety in many respects:

  • Excellent yields (up to 2500 kg per hectare)
  • Very good disease resistance, particularly to downy mildew
  • Very distinctive and fairly persistent citrus and resinous aroma properties.

Initially little known, it developed in the USA from the 2000s, reaching 20% of the cultivated area in 2013. It arrived in Europe in the early 2010s, in England, France, then Germany and Poland.

Planning to brew an American Pale Ale, an IPA, a pale ale? French organic Cascade is the ideal variety!

Its genetics are surprising: it comes from a Russian variety, Serebrianka, an English variety, Fuggle, and a wild American variety.
It has caused an upheaval in the hop world since its release, and many varieties are descended from it:

  • Mistral
  • Hallertau Blanc
  • Mandarina Bavaria
  • Cashmere

You can substitute Cascade with these varieties, or with:

  • Chinook,
  • Columbus.
  • Centennial (also known as the “Super Cascade”)
